Healthy for YOU Granola (made w/ honey)

This is the good stuff, much better than store-bought granola! I love this granola as cereal, for snacking or as added texture in a yogurt parfait. It would make for a nice gift, packaged in a mason jar with ribbon or fabric on top! You get all the benefits of whole grains with no added sugar!

Ingredients
  

  • 4 cups old fashioned oatmel
  • 1/2 teas. salt
  • 1 tbsp. cinnamon
  • 1/3 cup melted butter
  • 2/3 cup honey
  • 1 teas. vanilla
  • 1 teas. nutmeg optional
  • 1/3 cup nuts, coconut, craisins, raisins, and/or sunflower seeds optional

Instructions
 

  • Preheat oven to 300 degrees. Cover a cookie sheet with parchment paper.
  • Mix all the ingredients together in a large mixing bowl until well combined
  • Spread the oatmeal mixture onto the cookie sheet in an even layer and bake for 10 minutes.
  • Take out of the oven and stir the granola. Then spread out into an even layer again.
  • Bake another 10 minutes or until golden brown.
  • Allow the granola to cool completely on the cookie sheet. Then store in an air tight container.

Notes

For Granola With Big Clumps - Add an extra 2 tablespoons of honey, and an extra 2 tablespoons of melted butter. After the first 10 minutes of baking and the granola has been stirred... press down the granola evenly with a spatula or your hand (you can use a square of parchment paper if using your hand to prevent the granola from sticking to you). After the granola has baked for an additional 10 minutes.... allow it to COOL COMPLETLY on the pan and DO NOT touch or break it apart until it is no longer warm to the touch.
Store granola in an air tight container at room temperature for up to 2 weeks. You can also freeze granola in a gallon freezer bag for up to 3 months.
