Fried Eggs in Olive Oil (with cherry tomatoes)

Can I just…. Well…. Share? This isn’t a full recipe with all the toppings. Sometimes its the simple wholesome ingredients that taste the best… hence fried eggs in olive oil! I have been an eggs cooked in butter kind of gal most of my life. How could olive oil be better than butter, right!?!?  However this is in a different category to me. Now a days, depending on my mood and the time of day, I flip flop back and forth from eggs in melted butter to eggs in Extra Virgin Olive Oil.

The fried eggs cooked in olive oil dresses the egg flavor up for dinner. Yes I said dinner….Can you have a crispy fried egg for dinner...why, yes you can! The oil will give you those crispy edges on your egg! We are breaking down barriers with eggs for dinner and cooked in olive oil to boot.

The olive oil leaves a savory smooth taste and a slippery texture on the eggs. The earthy flavor makes me think of Mediterranean dishes. Olive oil is a staple to many homes in Europe and the Mediterranean especially.

The first time I made this I was shocked how well I liked it. And that is no Eggs-aggeration! Usually, I use olive oil when I am baking chicken or vegetables in the oven. I found the flavor from the Olive oil came through with a stronger taste cooked on the stove top.

Just for Fun…..

Being a kid who grew up in the 80’s and 90’s, I can’t talk about eggs without hearing the “Incredible Edible Egg” song from an old commercial promoting eggs that seemed to run regularly as I watched television as a kid. For some added fun I will leave a link HERE for the Incredible Edible egg song and commercial! It will CRACK you up! 🙂 Forgive me, the egg puns just keep coming!

A Few Words on Olive Oil……

I got a little excited about olive oil and started reading about it’s many uses and health benefits. Soon I plan to try it on my hair as a deep conditioner. I will confess to you I rubbed some into my feet after I read about its ability to soften and moisturize skin. I was suprised to find it left a warming, relaxing sensation on my feet!  

Olive oil is a superfood, in my opinion. I love to use it on chicken or veggies in the oven. I’m trying to incorporate it into my salads more. It is packed with antixiodants and anti-inflammatory compounds. Olive oil may improve heart health, blood pressure, brain function, help manage cholesterol, help manage body-fat composition, aid in the fight against chronic disease, and may even lift your mood!

Which Olive Oil Should I Buy?

Here is the deal … it is most effective if you make sure to buy oil that is processed well, produced in a timely fashion, and stored properly. HERE is a great podcast episode I came across about how olive oil is made, different varieties and flavors, how to make sure you don’t buy fake olive oil, and how olive oil SHOULD taste. The episode is about an hour long but very informative if you enjoy learning more about food production and food quality.

A couple quick facts are to buy olive oil in a dark tinted bottle and the bottle should state the year it was harvested. I’m not positive the Walmart bottle below had the year it was harvested but my current Olive Oil bottle from Costco does have the harvest year on the label. Also, Extra Virgin Olive Oil (EVOO) is the most potent form because it is less processed; therefore, it contains more antioxidants, polyphenols and other nutrients.

Selecting Ingedients for Fried Eggs in Olive Oil & Cherry Tomatoes

There are four ways to fry an egg ….sunny side up, over easy, medium, and over hard eggs. HERE is a great resource, with pictures, if you want to dive into the specifics on how to get a perfectly fried egg and to what consistency.

Grab a small to medium sized non-stick pan or cast iron skillet. I think the cast iron skillet enhances all flavors in general but this would still be delicious on a non-stick skillet. Hold the butter! Use organic or fresh eggs if you can find them but I have also made this with regular store bought eggs. You could even do egg whites if you prefer to save on the calories.

The best way to find flavorful tomatoes year round, in my opinion, is to buy Cherry tomatos! Cherry tomatoes are more likely to be sweet and juicy over any other regular tomato you find in the supermarket. Even in the winter, I find cherry tomatoes have more flavor and a juicy yet not-mushy texture compared to other tomatoes.

When the ingredients are simple and few, fresh ingredients are even more important for flavor. I prefer fresh and organic grocery items but my budget and taste spuds don’t always accommodate that sentiment. This is a dish that really shines with fresh ingredients but it will still be tasty if you can’t find or afford them!

How to Make Fried Eggs in Olive Oil (w/ cherry tomatoes)

To make Fried Eggs in Olive Oil you must first cut the tomatoes in half and chop the parsley, if using. Warm the pan or skillet to medium heat. Add enough olive oil to coat the pan well….about a tablespoon of oil or more. Then, add the eggs and seasonings to the hot olive oil. Now add the cherry tomatoes, cut side down, to the side of the pan.

Cook the egg to the desired egg yolk consistency… flip or no flip… you chose. Be careful of oil splatter, when cooking oils, that like to jump up from the bottom of the pan. Cook the tomatoes until they start to wrinkle and soften slightly, then remove. The tomatoes will most likely have a faster cooking time than the egg, depending on how well done you prefer your egg.

Remove eggs at your desired consistency and add a sprinkle of parsley and another dash of salt. For additional sides you can have bacon, sausage or fried canadian bacon…which is pictured here. Enjoy Fried Eggs in Olive Oil with you favorite bread! I have this with garlic bread when I want it to feel more like dinner and it certainly passes as an Egg-ceptional dinner or lunch….easy and quick! Healthy and delicious!

Add-Ins and Product Information for Fried Eggs in Olive Oil

Although, I enjoy Fried Eggs in Olive Oil with a few simple ingredients …. if you want to add more….add-ins could include… sliced onion, pepper, mushroom. Additional seasonings like onion powder, garlic powder, or red pepper would work. A sprinkling of shredded parmesan cheese on top would be nice as well. 

The cherry tomatoes in the picture are branded as, Flavor Bombs, and I buy them at Costco. As you can see they come on the vine which adds to their freshness. If you have large flavorful tomatos from your garden or local farmers market….you could chop or slice them and fry alongside the eggs as well.

The Canadian bacon is also from Costco. The garlic bread is from the freezer aisle at Kroger. It is Kroger’s brand and about $3 for 5 twisted bread sticks. They also sell these same bread sticks filled with mozzerella. They are yummy, bake up nicely, and look beautiful on your plate.

In conclusion, cooking eggs in Olive oil will add a unique flavor to your eggs and give you that crispy brown edge. This is a simple way to make a quick meal that is delicious and so good for you! It can also be as affordable as you make it. I hope you try it!

Fried Eggs in Olive Oil (with Cherry Tomatoes)

Sometimes it's the simple wholesome ingredients that taste the best! The olive oil brings a savory and earthy flavor to the eggs. It will give you an egg with crispy edges! This is a quick and healthy breakfast that can easily pass for lunch or dinner.

Ingredients
  

  • 2 eggs
  • 1 to 2 tbsp olive oil extra virgin
  • 7 to 10 cherry tomatoes
  • salt and pepper to taste
  • chopped parsley optional

Instructions
 

  • Wash and dry the cherry tomatoes then slice in half. Chop parsley, if using, and set aside.
  • Pre-heat a small to medium-sized cast iron skillet (or non-stick pan) to medium heat. After the skillet has warmed, add enough olive oil to generously coat the skillet.
  • Add the eggs to the pan. Now add the tomatoes around the eggs, sliced-side facing down. Sprinkle with salt and/or pepper.
  • Remove the tomatoes once they start to wrinkle and soften. Cook the eggs to desired consistency.
  • Once the tomatoes and eggs are plated, sprinkle another dash of salt on top. Then, sprinkle on the parsley. Yum!

Notes

This recipe is best fresh but if you have leftovers… store them in an air-tight container in the fridge for 3 to 4 days.
Possible Add-Ins: garlic powder, onion powder, pepper flakes or a sprinkle of shredded parmesan cheese on top. Fry additional veggies with the eggs such as peppers, onions or mushrooms.
Possible Sides: bacon, sausage, or fried canadian bacon. Eat with your favorite bread. I like garlic bread! The garlic bread and olive oil make this dish feel more like dinner if you want to make this a quick and healthy lunch or dinner!
