Secret Ingredient Fruit Salad - Easy to Make Recipe

This "Secret Ingredient" Fruit Salad is fresh and tasty. Filled with a variety of textures and fruit in each bite! This fresh fruit salad is wonderful during the hot days of summer …. think backyard BBQ, pool party, picnic or Fourth of July celebration! It is beautiful on a holiday table alongside Easter lunch or brunch!

Ingredients
  

  • 30 oz canned peach slices undrained
  • 20 oz canned pineapple chunks undrained
  • 1 3.4 oz box of instant Vanilla pudding mix "Secret Ingredient"
  • 1 lb fresh strawberries stemmed and sliced into fourths
  • 1 bunch grapes any color
  • 1 fresh banana sliced
  • 1 cup fresh blueberries
  • 1 - 2 tbsp sugar (you can also substitute in a sweetener of your choice) optional

Instructions
 

  • Wash the blueberries, grapes and strawberries. From the strawberries, remove the stem and slice them into fourths. Set the berries and grapes aside to dry.
  • Peel and slice the banana.
  • Open the canned fruit but DO NOT DRAIN the juice. In a large mixing bowl gently combine the canned fruit with the pudding mix. If a few small lumps remain they will dissolve as the salad chills.
  • Stir in the sugar/sweetener and fresh fruit: strawberries, banana, grapes, and blueberries.
  • Cover and chill for 2 to 3 hours.

Notes

This salad is best eaten the day it is made but will last in the freg for 2 to 3 days stored in an air-tight container. If the salad starts to turn mushy you can freeze it in a covered ice cube tray for smoothies!
Substitutions: Swap out any fruit for additional berries/bananas/grapes OR swap in a different fruit of choice such as mandarin oranges. Ensure the fruit volume and liquid content stays the same.
Instead of sugar you can use fake sweeteners (check conversion chart or taste test as you add) OR use natural sweeteners such as orange juice or honey. You may find you don't need any added sugar or sweeteners!
Ideas for Serving and Eating :) .... Serve in a large clear bowl so all of the colorful fruit is on display. Serve in individual bowls/cups with a dollap of whipped cream; you can top with lemon zest and/or a mint leaf. Put a serving of fruit salad over a scoop of vanilla ice cream and/or on a piece of angel food cake, pound cake, or shortcake!
